It’s late at night and a loved one is craving something sweet. Mithai box is empty. It’s a pain to place an order for dessert.

Instead, open the refrigerator. Just a little sugar, some curd and milk can do wonders. Following are three easy-to-prepare desserts that you can prepare using things that are generally available at most kitchens using sangam dairy products.

 1. Classic Kheer

Kheer is the comfort in a bowl! It requires patience, rather than skill.

You will need:

  •  1 litre full-cream milk
  •  1 cooked cup of rice (washed and soaked for 20 minutes)
  •  4 tablespoons sugar
  •  1 teaspoon ghee
  •  4 cardamom pods, crushed
  •  A handful of chopped almonds and raisins

Method:

  •  Fry ghee and lightly fry the rice.
  •  Add milk and bring to a boil.
  •  Cook on low heat for 35 to 40 minutes. Stir often.
  •  In the final 5 minutes add sugar, cardamom and nuts.

  2. Custard and Milk Pudding

It’s a fancy term for thickened milk. It’s fun for children and only takes about 15 minutes.

You will need:

  •  500 ml milk
  •  2 tablespoons custard powder
  •  3 tablespoons sugar
  •  ½ teaspoon vanilla essence

Method:

  •  Dilute with ¼ cup of cold milk to make the custard powder blend.
  •  Heat the remaining milk to a boil, adding sugar.
  •  Reduce heat and add custard paste.
  •  Cook until thickened, 3-4 minutes. Add vanilla.

Sangam Dairy milk is good here as well; the richer the base the better it will set up. Serve in small bowls and refrigerate for two hours. If a plain milk pudding, replace the custard powder with cornflour. Top with sliced banana, mango or crushed biscuits.

 3. Quick Yoghurt Cups

It is not every dessert that requires a stove. This is for hot afternoons and lazy evenings.

You will need:

  •  Curd that has been allowed to hang for 30 minutes, it is 1 cup thick.
  •  2 tablespoons of honey or powdered sugar
  •  Seasonal fruit, chopped
  •  Crushed nuts/granola
  •

Method:

  •  Add honey to the hung curd and whisk until smooth.
  •  Serve in a glass with fruit.
  •  Repeat layers and top with nuts.
  •  Chill 20 minutes prior to serving.

Make use of fresh, set curd for the best texture. Look at the pack date before starting as sour curd will alter the flavor. Cold curd is easiest to whisk from the fridge.

A few little tips for improved performance!

There are a couple of things that make homemade desserts easier:

  •  Please look for the “use by” date on milk and curd.
  •  Kheer and pudding usually get sticky and are stirred to prevent this.
  •  Always have some ghee, Cardamom and Sugar on hand for late night cravings!
  •  Taste before sweetening. Fruit provides its own sugar.
  •  Keep leftovers covered in the refrigerator. Kheer and custard can be stored for 1 day.
